Asian Green Bean Stir Fry

If you work all day, the last thing you want to do when you get home is to slave in front of a hot stove to prepare dinner. However, you don’t want to fall to temptation and drive through the take out window for some sub-standard fast food. If you are trying to eat healthy and watching your weight, you want to eat foods that are nutrient rich, giving the most goody for the calories you consume.

The below recipe is great for a quick snack or as an accompaniment to a main entrée. It’s a great complement to chicken, fish, pork or beef.

Asian Green Bean Stir Fry
1 teaspoon sesame oil
1 pound green beans, cut 1-inch portions
Pinch of crushed red pepper
1/2 cup water
1 1/2 cups fresh or frozen mixed stir-fry vegetables (thaw if frozen)
1 tablespoon black bean-garlic sauce (found in Asian food section of most large grocery stores)

Directions:
1. In large frying pan heat sesame oil over medium-high heat.
2. Add green beans and crushed red pepper.
3. Cook 2 to 3 minutes until seared, stir often.
4. Add water, cover, reduce heat to medium.
5. Cook 3-6 minutes, stir occasionally, cook longer for tender vegetables.
6. Uncover, increase heat to medium-high, add stir-fry vegetables and black bean-garlic sauce.
7. Cook until heated through, stirring often.
8. Dish is ready when the majority of the liquid has evaporated.
Serves approximately 4,1 cup servings.

You will need:

* 4 chicken thighs or breasts
* 1/2 onion, cut into quarters
* 2 cups chicken broth
* 2 cups water
* 3 tablespoons oil
* 6 big tomatoes
* 1 tablespoon chili paste or chili powder
* 1 teaspoon garlic, pressed
* 1/2 teaspoon cumin
* 1 teaspoon oregano
* Salt, to taste
* 1/2 teaspoon unsweetened cocoa powder

How to make it:

Preheat the broiler to high. Heat 1 tablespoon of the oil in a skillet over a hot flame, then brown the chicken pieces on both sides. Add the broth and the water and bring the mixture to a boil.

Slice the tops off the tomatoes and put them cut side down on a cookie tray with the onion quarters. Drizzle the rest of the oil over them and broil until the tomatoes are shriveled and wrinkled. Let them cool for a few minutes.

Turn the chicken broth down to a simmer and add the oregano, garlic, cocoa, chili, and cumin. Turn the chicken over after a few minutes and keep cooking it.

Peel the tomatoes and remove the seeds with a teaspoon. Mash them a bit with your hands and add them to the sauce. Separate the onions and add these too. Keep cooking the chicken and the sauce will reduce.

If the liquid disappears before the chicken is done, you can add more water, half a cup at a time. The chicken is done when it is no longer pink in the middle and when it is 170 degrees F inside.

Aloo Paratha Recipe

The Indian cuisine is by far one of the most varied cuisines of all. As it is, there are so many variations in this cuisine, that you would hardly find any similarity in the cuisines of the north Indian recipes, with the south Indian recipes. So, the Indian cuisine is actually a door to thousands of wonderful recipes which are there at your disposal for tickling your taste buds.

A striking feature of this cuisine is that it holds quite a few recipes that can act as both breakfast/snacks, as well as main course meal. One of such recipes is Aloo paratha. This recipe has been a part of the Indian kitchens for a fairly long period of time and has been playing the role of Sunday morning special breakfast with great ease. Aloo Paratha is a very popular breakfast recipe and is particularly popular in North India. The paratha is best served along with pickles and curd.

Ingredients:
o 1 cup Water
o 2 cup Wheat Flour
o 2-3 boiled and mashed Potatoes
o 1/4 tsp Red Chilly Powder
o 1 tsp Chaat Masala
o Salt to taste
o Oil/ghee

Direction:
1. Take the flour in a bowl and add some water to it. Knead it properly to make soft dough. Make sure that it does not stick to your hand.

2. Now, leave this dough for around half an hour.

3. After this, take the boiled potatoes and add salt, chili powder along with chaat masala. Now mix these ingredients thoroughly, to form the stuffing.

4. Now take the dough and roll out small balls out of it. Thereafter, take the balls, flatten them a bit, apply a bit of oil to its center and then put some stuffing mixture in it.

5. Thereafter, draw the edges towards its center to cover this mixture. Make sure that the edges do not remain open and the stuffing is properly covered. Now, press the resulting dough balls gently and dust it with wheat flour. Flatten to the size of Roti.

6. After this is done, place the paratha over a preheated griddle. After some time reverse the side of paratha. Continue till golden brown patches appear on it.

7. Sprinkle a little bit of oil and then flip over again. Make sure that you sprinkle oil on either sides of the paratha. Cook till it is properly done.

8. Your Aloo Paratha is ready to serve.

Serve Aloo Paratha along with Chutney, Tomato Ketchup or curds.

Chicken Malai Kebab

Ingredients

The ingredients for Chicken Malai Kebab are:

1. Boneless chicken cubes –800gms

2. Cheddar cheese, grated–60gms/ ¼ cup

3. Coriander leaves, chopped–20gms/4 tsp

4. Cornflour -15gms/1table spoon

5. Cream-120ml/ ½ cup

6. Egg-1

7. Garlic paste-35 gms/7 table spoon

8. Ginger paste—45 gms/3 table spoon

9. Green chillies, Chopped fine-8 (add chillies as you require)

10. Mace ( javitri ) powder–2.5 gms/ 1/2 table spoon

11. Nutmeg ( jaiphal ) powder

12. 2.5gms/ ½ table spoon Oil for basting

13. Salt to taste.

14. White pepper powder–5 gms/ 1 table spoon.

Methods:

The Steps to cook chicken malai kebab are

1. First Mix the ginger and the garlic pastes, white pepper powder and salt, then Rub the mixture on to the chicken pieces. Set it aside for 15 minutes.

2. Then Beat together the egg, cheese, green chillies, coriander, cream, mace, nutmeg and cornflour and rub chicken pieces with the mixture. Keep it aside for three hours.

3. String together chicken pieces on a skewer an inch apart. Roast
on a charcoal grill for five minutes or in a preheated oven at
275 *F for seven minutes.

4. Remove, Hang skewers for five – seven minutes to let excess moisture
drip off. Brush with oil and roast again for three minutes.

5. Ready to serve with any main course.

Time: Preparation: Three and half hours approx

Cooking: Fifteen minutes

To Serve: Serve as a cocktail snack or as an accompaniment with the main course.

Serve these smooth, creamy chicken malai kebabs with mildly flavored cheddar cheese, immediately. This Indian dish can be accompanied with any main course, as it has spicy and smooth creamy chicken pieces.

Kadhai Paneer

Kadhai paneer is considered as one of the most delicious and a must Indian recipe for any kind of occasions. All the cottage cheese dishes (paneer) considered as very important in the Indian tradition without which the food remains incomplete.

Ingredients:
250gms Cottage cheese (Paneer)
4 medium sized onions
4 large tomatoes
2 large capsicums (cut them long)
1 long piece of ginger
4-5 flowerless clove
3-4 Cinnamon
1 Bay leaf
2 tbsp butter
Salt to taste
¼ tsp red pepper powder
¼ tsp turmeric powder

Method: Grind the onions, tomatoes and ginger in a grinder to make a thick paste.
Heat the butter in a deep mouthed pan. Put the bay leaf and minced clove and cinnamon. Now to this, add the paste and let the oil separate from the paste. Add the salt, turmeric powder and pepper to the mixture. Add the sliced capsicum and cottage cheese. Let it cook on low flame for 2-3 minutes. Enjoy the delicacy of this very own Indian recipe.

Garnish: Put some finely chopped coriander leaves to the dish and serve hot.

Palak Paneer: (Spinach cottage cheese)

Ingredients:
250gms Cottage cheese (Paneer)
8-10 stalks of spinach minced properly.
1 long piece of ginger
4-5 flowerless clove
3-4 Cinnamon
1 Bay leaf
2 tbsp butter
Salt to taste
¼ tsp red pepper powder
¼ tsp turmeric powder

Method: Lightly bring the spinach to a very mild boil. Grind the spinach after cooling in a grinder. Heat oil or butter in a pan and add the spinach which was grinded. To this add the minced cinnamon and cloves for flavor. Now let the oil separate from the paste. Add salt, turmeric powder and pepper to the mixture. Add the cottage cheese cut in long pieces or diced. Let it cook on low flame for 2-3 minutes. Serve hot.

Indian Egg Hakka Noodles Recipe

Egg Chowmein is an Indian Chinese dish which is easy to prepare at home for dinner or heavy snacks. It takes about 25 minutes to prepare this “always-favourite” fast food.

Ingredients

  • Noodles/Chowmein (the Chinese hakka ones are the best)
  • 1 Egg
  • Vegetable Oil
  • Onion
  • Carrot
  • Capsicum
  • Beans
  • Green Chilli
  • Green Peas
  • Turmeric Powder
  • Soy Sauce
  • Ajeena-moto
  • Salt + Black Pepper

Preparation Time: 10mins

Cooking Time: 15mins

Serves: 2

Steps

1. First boil 1 packet of noodles, drain the water and keep aside.

2. Break 1 egg into a non-stick pan with vegetable oil and scramble it till cooked and keep aside

3. Take 1 small onion, 1 carrot, 6-7 beans, 1/2 capsicum and chop all of them into small pieces.

4. In a non-stick pan, add 2 tablespoon of vegetable oil and heat for 2mins, then add chopped onion (Step 3) and fry for 2mins.

5. Then add 2 green chilli split into halves in the pan for 1min.

6. Put the chopped vegetables (Step 3) in the pan and keep stirring. Also put a handful of green peas in the mixture. Add 1/2 teaspoon turmeric and salt (up to taste).

7. When the mixture is fully cooked (soft), then add soy sauce and stir for 2mins.

8. Add 1/2 teaspoon of ajeena-moto and add the boiled noodles (Step 1) and stir for 2 minutes.

9. Finally put the scrambled egg (Step 2) in the noodle mixture and cook till you get that mouth watering smell.

Garnishing : You can add tomato sauce, chilli sauce and sliced onion on top of the prepared dish. You can also add chopped coriander and black pepper powder to spice things up even more.
